The vision for this project was to create far more than a temperature-controlled dry-ageing room. The objective was to transform a highly specialised meat maturation environment into a striking architectural feature that would become the centrepiece of the James Whelan Butchers concession, allowing customers to experience the craft and tradition of dry-ageing while maintaining the strict environmental conditions essential for producing premium-quality beef.

From the outset, IDS was tasked with delivering a bespoke solution that combined architectural excellence with technical performance. Every element of the project was designed, manufactured and installed by IDS to create a seamless integration of structural steelwork, architectural glazing, environmental control and customer engagement.

At the heart of the project is a bespoke architectural steel and glazed enclosure, manufactured using the RP Technik Fineline 70 steel glazing system. The slimline steel profiles maximise transparency while creating a strong architectural presence within the retail environment. The floor-to-ceiling glazed display allows customers to observe the dry-ageing process, transforming what would traditionally be a back-of-house operation into an engaging retail experience that reinforces the James Whelan commitment to quality, craftsmanship and provenance.

Supporting the glazing is a precision-engineered structural steel framework, manufactured in-house by IDS to accommodate the extensive glazed elevations, specialist refrigeration systems and the significant loads associated with hanging and displaying premium cuts of meat. Every component was fabricated to exacting tolerances to ensure a flawless installation and long-term structural performance.

A key innovation within the project was the development of a bespoke adjustable shelving and hanging system, designed through IDS's in-house research and development programme. Recognising that no off-the-shelf solution could satisfy the client's operational requirements, IDS engineered a flexible system that allows the display configuration to be easily adapted to accommodate varying cuts, sizes and presentation styles. This bespoke solution provides maximum versatility while maintaining the clean, contemporary aesthetic of the overall installation.

The project also incorporated an automated entrance to the Eolas Room, carefully integrated within the architectural steel glazing system. The automated access solution enables efficient staff movement while protecting the carefully controlled internal environment, ensuring that the temperature and humidity conditions required for the dry-ageing process remain stable and uncompromised.

Delivering a project of this nature required close collaboration between IDS, the client, the structural engineer and specialist refrigeration contractors. Coordination was essential to ensure the structural steelwork, glazing, automation systems and refrigeration infrastructure were fully integrated, while maintaining the premium finish expected within a flagship retail environment.

Beyond its technical performance, the completed installation has become a defining feature of the store. The combination of precision-engineered architectural steelwork, expansive glazing, carefully controlled lighting and premium display systems creates an immersive retail experience that immediately captures customers' attention. Rather than concealing the specialist meat maturation process, the installation celebrates it, creating a transparent showcase that highlights the craftsmanship behind every product while strengthening the connection between the customer and the brand.
